Super tasty mixed fruit scones

I'm not joking when I say: yes these scones are super tasty!

Oh and very simply to make...

When we had the cake shop, these were a best seller . Made by my teenage daughter and loved by many. Typical bought on a "some for now some for later basis" with many customers freezing them for when they wanted a tasty scone at home.

Ingredients

    • 50g Caster Sugar
    • 2 x Eggs 
    • 100g Butter 
    • 450g Self Raising Flour
    • 100g Mixed fruit
    • 1 tsp baking powder
    • 200g Milk (Approximately)

Equipment

    • Mixing bowl
    • Spoon / Fork
    • Baking tray
To Decorate
    • Sugar

To Serve

On its own or why not try out one of the following:

    • Warm with butter
    • Clotted cream / Jam / Butter

Steps

  1. Add the flour, sugar, baking powder and cubed butter into a bowl and rub together to create a bread crumb like texture.

  2. Make a well in the centre of the flour mixture and pour in the beaten eggs and half of the milk.

  3. Bring together with your hands, if its to dry, add some more milk to the mixture.

  4. Add the dry fruit, I will say this is personal preference, in our house we love loads of fruit which maybe around 250g and not the 100g as suggested. Mix until combined, don't over work the mixture.

  5. Once combined lay the mixture out on to a lightly floured surface. If you prefer you can cut by hand or use a cookie cutter, roll the mixture out to around 1" thick. Cut out the scones and place them on your prepared baking tray, brush with egg wash and sprinkle with sugar.

  6. Bake in the oven until risen and golden brown at around 200c  Gas mark 7 for around 15 minutes.
